出し汁Soup stock
香り豊かな花かつおと上等の昆布を贅沢に使った出し汁は、日本料理の味の要です。
当店自慢の出し汁は、毎朝料理長自らが手がける新鮮な出し汁。嘘偽りのない本物の味をお届けしたいと願いつつ、今日も大鍋に向かっております。
The savory soup made with the fragrant (dried bonito shavings) and fine kelp is the key to the taste of Japanese cuisine.
Our specialty is fresh soup stock.Made by our Master-chef every morning and we promise to deliver a genuine taste without lies.
御飯Rice
当店で使用しているお米は、地元産のハツシモ。
秋の終わり、初霜の降りる頃にようやく実ることから命名されたという、岐阜を代表するお米です。大粒で粘り気が少ない為、炊きたてでも冷めてからでもおいしいのが特徴。揖斐地方の肥沃な土と清らかな水に育まれ、提携農家の方が丹精込められたお米を、さらにおいしく召し上がっていただけるよう当店でも心を配っております。
The rice used in our store is locally-grown Hatsushimo.
At the end of autumn, it is the representative rice of Gifu that was named after its fruiting at the time of the first frost.As it's large and less sticky, it tastes delicious even after it is cooked or cooled down. We are nurtured by the fertile soil and pure water of the Ibi region, Our contracted farmers have taken so much effort to grow the rice so we also consider to make it more delicious for our guest to enjoy it's taste.
手作り味噌Homemade miso
「池田でおいしい味噌を作っている人たちがいるよ。」
そんな評判を耳にしたのが御縁で、味噌作りをお願いしているのは池田町農業婦人クラブの方々。 元々は自分たちで使う為に始められたそうですが、現在では販売もされています。毎年、当店の樽にいくつも仕込んでいただいているのですが、地元のお母さん方の心がこもった、大変おいしいお味噌です。

I have heard of such a reputation, and Ikeda Town Agricultural Women's Club is asking for making miso. Originally it they started making it just for them selves at the beginning.But now they're also selling it as their business.Every year, they produces of lot of miso stocked in the barrels of our restaurant and it is very tasty miso as it's made by local women with their love.

当店でお出ししている日本茶は、地元の特産品である美濃いび茶。池田山の麓に広がる茶畑で、揖斐川伏流の美しい水によって栽培されています。
まろやかな味わいと豊かな香りのお茶は、当店ばかりでなく揖斐の自慢でもあります。
The Japanese tea served at our restaurant is Mino-Ibi tea, a local specialty. The plantation is located at the foot of Mt.Ikeda where's also know for a clean water of Ibi river.
The mellow taste and rich fragrant of the tea are the valuable specialty.We all the people of Ibi region are proud of.
地元野菜Local vegetables
店頭に並ぶ野菜は、昔に比べ季節感が薄れつつあると言われますが、地元の畑で収穫される野菜は、今も季節を教えてくれます。
味わいも栄養も一番の旬の野菜を、いかに料理としてご提供するか、料理人の腕の見せ所です。
It is said that the seasonal vegetables in the store are fading compared to the past, but the vegetables harvested in the local fields still shows the season.
The chef's skill is the most important for creating dishes using seasonal vegetable at its best for both taste and nutrition.
海鮮食材Seafoods
春の鯛やほたるいか、夏の鮎や鱧(はも)、秋の鮭や秋刀魚、冬のフグや蟹など、魚貝にも一番おいしい旬の時期があります。
市場から届く新鮮な素材に向かう時、料理人の身がひきしまります。
Salmon and firefly squid in spring, sweetfish and eel in summer, salmon and saury fish in autmn.As represented by each seafood also has season's best.
When fresh seafoods arrive from market , it's the time for the chef to be tensed up.
醤油Soy sauce
隣町神戸町の老舗が醸造する醤油は、ほんのり甘く深い味わいのもの。
お料理の味を引き立ててくれます。The soy sauce brewed by a long-established store in the neighboring town of godo has a slightly sweet and deep taste.
It enhances the taste of the dish.
